Ingredients

50 garlic cloves or 5 bulbs, peeled
2 tbsp butter
2 tbsp olive oil
2 large onions, diced
1 tbsp fresh thyme, chopped
6 cups clear chicken broth
a bunch of fresh herbs (parsley, thyme, bay leaf) – *you can always use dried herbs
instead of fresh
3 cups stale bread, diced
1 cup sour cream

Preparation Method

Preheat the oven to 180 degrees.
Cut off the top of each garlic bulb and spread them over a piece of aluminum foil.
Add some olive oil and roast the garlic for 30 minutes.
Then, take it out of the oven and let it cool. In the meantime, in a pot, heat 2 tablespoons of olive oil over a medium heat and add some butter.
Add the onions and cook for 10 minutes. When the garlic is ready, use a fork to mash it and add it to the pot.
Then, add the herbs and chicken broth.
Reduce the heat and add the bread. Cook for 5 more minutes.
Blend your soup until it becomes smooth.
Return the creamy mixture to the head and add the sour cream.
Add salt and pepper to taste.
